1. For Asian Cooking
Laksa Pesto Prawn Toast - Chef Richard’s Recipe

A little local flavour, with a twist.
Laksa leaves meet sweet basil in this creative take on prawn toast and a light coconut chilli drizzle. Packed with fragrant herbs and bold flavours, it's proof that the herbs you grow can take your home cooking somewhere unexpected.

Ingredients:
Prawn toast
- 250g raw prawns, peeled and deveined
- 4 slices thick white bread or shokupan
- 2 cloves garlic, minced
- 1 tsp light soy sauce
- 1 tsp sesame oil
- 1/2 tsp sugar
- 1/4 tsp white pepper
- 1 tsp cornstarch
- 1 egg white
- Cooking oil
Laksa pesto
- 6 - 8 fresh laksa leaves
- 8 - 10 sweet basil leaves
- 2 tbsp roasted cashews
- 1 small garlic clove
- 1 tbsp grated Parmesan
- 3 tbsp olive oil
- 1 tsp lime juice
- 1/2 tsp honey or sugar
- Pinch of salt
Coconut chilli drizzle
- 2 tbsp coconut cream
- 1 tbsp sweet chilli sauce
- 1/2 tsp lime juice
To finish
- Fresh laksa leaf, finely sliced
- Lime zest
- Optional sliced red chilli
How To Make It:
1. Prepare the prawns
Pat the prawns dry, then chop them finely while keeping a little texture. Mix with garlic, soy sauce, sesame oil, sugar, white pepper, cornstarch and egg white until slightly sticky.
2. Build the toast
Cut the bread into halves or triangles. Spread a generous layer of prawn mixture on one side and press it down lightly.
3. Air - fry until crisp
Arrange the toast prawn-side up in the air-fryer basket. Lightly spray or brush with cooking oil, then air-fry at 180°C for 7 - 8 minutes until golden and cooked through.
4. Make the laksa pesto
Pulse the laksa leaves, sweet basil, cashews, garlic, Parmesan, olive oil, lime juice, honey and salt until slightly chunky. The laksa leaf should be fragrant, not overpowering.
5. Mix the drizzle
Stir the coconut cream, sweet chilli sauce and lime juice together until smooth.
6. Finish and serve
Spoon a little laksa pesto over the hot prawn toast, add the coconut chilli drizzle, then finish with fresh laksa leaf and lime zest. Serve while the toast is still crispy.
Little tip: The sweet basil helps round out the stronger laksa-leaf flavour, so the pesto stays fresh and easy to enjoy.

Give your drinks a fresh twist with homegrown mint. Our Pineapple Mint Fizz combines tropical pineapple with refreshing mint and calamansi, topped with a little fizz - perfect for a sunny afternoon or your next get-together. Easy to make and a refreshing match for the Laksa Pesto Prawn Toast.

Ingredients:
Pineapple mint base
- 120g ripe fresh pineapple, cut into small pieces
- 10 - 12 fresh mint leaves
- 2 - 3 calamansi (or 1/2 lime)
- 1 - 2 tsp honey or simple syrup, only if needed
To build the drink
- 250ml chilled sparkling water
- Plenty of ice
To finish
- Fresh mint sprigs
- Small pineapple wedges
How To Make It:
1. Muddle the pineapple & mint
Add the pineapple, mint leaves and calamansi juice to a glass or shaker. Gently muddle to release the pineapple juices and mint aroma - no need to crush the mint too hard.
2. Build the drink
Fill a clear glass with plenty of ice, then add the pineapple-mint mixture. Add a little honey or simple syrup only if the pineapple needs extra sweetness.
3. Add the fizz
Top with chilled sparkling water and give it a gentle stir. Keep it light and fizzy rather than overly sweet.
4. Finish & serve
Garnish with a fresh mint sprig and pineapple wedge. For extra mint aroma, gently clap the mint between your palms before garnishing.
Easy swap: No calamansi? Fresh lime works nicely too.
3. For the Pasta Lovers
Rosemary & Oregano Garlic Butter Pasta

Fragrant herbs and garlicky goodness, tossed to comfort.
Turn your homegrown rosemary and oregano into a simple, comforting pasta dish. Fragrant rosemary and earthy oregano come together with garlic butter, parmesan and pasta for an easy meal that feels a little more special.

Ingredients:
Pasta
- 200g spaghetti or linguine
- Salt, for pasta water
Garlic herb butter
- 2 tbsp butter
- 1 tbsp olive oil
- 3 cloves garlic, finely minced
- 2 sprigs fresh rosemary, finely chopped
- 1 - 2 tbsp fresh oregano leaves
- 1/2 tsp chilli flakes, optional
- 30g grated Parmesan
- 1/2 lemon
- Salt & freshly cracked black pepper
To finish
- Extra Parmesan
- Fresh oregano leaves
- Small rosemary sprig
- Lemon zest
How To Make It:
1. Cook the pasta
Bring a pot of salted water to a boil and cook the pasta according to the package instructions. Reserve about 1/2 cup of pasta water before draining.
2. Build the garlic butter
Heat the butter and olive oil in a pan over medium heat. Add the garlic and cook gently until fragrant, being careful not to let it brown too much.
3. Add the herbs
Add the chopped rosemary, oregano and chilli flakes. Cook for about 30 seconds to release the herbs' aroma.
4. Toss the pasta
Add the cooked pasta to the pan with a splash of reserved pasta water. Toss well until the butter coats the pasta and forms a light, glossy sauce.
5. Finish with Parmesan & lemon
Add the Parmesan, a squeeze of lemon juice and plenty of black pepper. Toss again and adjust the seasoning to taste.
6. Finish & serve
Top with extra Parmesan, fresh oregano, lemon zest and a small rosemary sprig.
Little tip: Don't overcook the rosemary and oregano. Adding them towards the end keeps their fresh aroma bright and fragrant.
4. For Everyday Cooking
Lemon Balm Herb Chicken

Zesty lemon balm and herby comfort in every bite.
Make everyday meals a little more exciting with lemon balm. Its fresh, citrusy character pairs beautifully with chicken, lemon, garlic and butter for an easy dish you can add to your weeknight rotation.

Ingredients:
Herb chicken
- 2 boneless chicken breasts or chicken thighs
- 1 tbsp olive oil
- Salt & freshly cracked black pepper
Lemon balm butter
- 1 tbsp butter
- 2 cloves garlic, finely minced
- 1 small handful fresh lemon balm leaves, finely chopped
- 1/2 lemon, juiced
- 1 tsp honey, optional
- 1/2 tsp chilli flakes, optional
To finish
- Fresh lemon balm leaves
- Lemon wedges
- Lemon zest
- Black pepper
How To Make It:
1. Season the chicken
Pat the chicken dry and season both sides generously with salt and black pepper.
2. Pan-sear the chicken
Heat the olive oil in a pan over medium - high heat. Add the chicken and cook for about 5 - 7 minutes on each side, or until golden and cooked through. Remove from the pan and set aside.
3. Make the lemon balm butter
Lower the heat and add the butter and garlic to the same pan. Cook until fragrant, then add the chopped lemon balm and stir gently.
4. Add the lemon
Squeeze in the lemon juice and add the honey if using. Stir everything together, allowing the lemon balm to infuse into the buttery sauce.
5. Bring it together
Return the chicken to the pan and spoon the lemon balm butter over the chicken. Let it warm through for another minute.
6. Finish & serve
Slice the chicken and drizzle over the remaining herb butter. Finish with fresh lemon balm, lemon zest and cracked black pepper. Serve with roasted vegetables, salad or rice.
Little tip: Add the lemon balm towards the end of cooking to keep its fresh, citrusy character. For an extra burst of flavour, tear a few fresh leaves over the chicken just before serving.
